Organic arrowroot powder, also known as arrowroot starch, is the easily digested starch obtained from the arrowroot plant, Maranta arundinacea.
It is valued as a thickening agent, especially when a clear or glossy appearance is desired, often being used in puddings, pies, gravies and other sauces. It is also used in baked goods. Arrowroot powder is neutral tasting and tolerates acidic ingredients, such as citrus.
